Job summary

Oats Overnight is seeking a Food Scientist in Arizona to drive ingredient qualification and optimization for oat-based, high-protein products. You will enhance formulations from ideation to commercialization, working hands-on with next-generation ingredient solutions and DOE-driven testing.

You will collaborate with R&D, Quality, and Manufacturing to scale formulas, improve product nutrition, and support clean-label innovations while ensuring regulatory compliance and product safety.

Qualifications

• 2+ years of experience in ingredient development, application, or formulation optimization.
• Bachelor's degree in Food Science, Chemistry, Nutrition, or related field.
• Hands-on analytical chemistry for ingredient and product evaluation.
• Proficiency in DOE and statistical analysis to interpret data.
• Familiarity with regulatory requirements and labeling standards.

Responsibilities

• Develop and optimize ingredient qualifications to improve functionality, nutrition, and cost.
• Design and execute experiments to evaluate formulations and stability.
• Collaborate with R&D, Quality, and Manufacturing to scale formulas.
