The Food & Beverage Manager will be responsible for the overall operation, guest experience, and profitability of The Karol Hotel's food and beverage (F&B) outlets – Katch Bistro, Vantage Rooftop Bar, and K Club Bar. The F&B Manager directly supervises and leads the team of approximately 20 employees.
The ideal candidate is a hands‑on hospitality leader with a strong food and beverage leadership background who can create memorable guest experiences while driving revenue and maintaining high service standards.
Essential Functions
- Supervises daily Food and Beverage (F&B) shift operation and monitors compliance with all F&B policies, standards, and procedures
- Lead, coach, and develop direct reports including assistant managers, supervisors, and shift leaders
- Recruit, interview, hire, and onboard new F&B team members
- Supervise staffing levels and create weekly staff schedules to verify that guest service, operational needs, and financial objectives are met
- Encourage and build mutual trust, respect, and cooperations among team members
- Establish and maintain service standards and operating procedures for all F&B outlets
- Ensure compliance with health, safety, sanitation, alcohol service, and hotel policies and regulations
- Take ownership of F&B revenue performance and develop strategies to achieve and exceed budgeted revenue targets
- Monitor food cost, beverage cost, labor cost, inventory, purchasing, and operating expenses
- Work with the Sales and Kitchen teams to develop compelling menus, specials, packages, and experiences
- Develop partnerships, collaborations, pop-ups, tastings, live entertainment, and special events that generate incremental revenue
- Be highly visible and engaged with guests, actively soliciting feedback and addressing concerns in a timely and professional manner
- Ensure successful performance serving guests with an exceptional experience to ensure high performing scores on Marriott's Guest Satisfaction Survey
Qualification Standards
Education & Experience
- 5+ years restaurant management/leadership experience
- Hotel experience preferred
- High School diploma or higher
- Strong leadership, communication, organization, and problem-solving skills
- Demonstrated experience managing revenue, labor, food and beverage costs, and departmental budgets
- Excellent guest service and relationship-building skills.
- Ability to work effectively in a fast-paced, high-volume hospitality environment
- Ability to work a flexible schedule, including evenings, weekends, and holidays
