Job summary

Nationally recognized hotel & restaurant is seeking a Chef de Cuisine to join our culinary team for immediate hire. You will work hands-on in the kitchen with input on specials and menu development under the Executive Chef, with admin time kept to about 20% of the role.

You will guide from par-based purchasing, cost controls, staffing, and quality assurance while maintaining high standards of sanitation and safety.

Qualifications

• Previous fine dining experience required.
• Culinary degree required.
• Experience with menu development and specials input.

Responsibilities

• Order all products based on par systems and inventory management.
• Maintain budgeted food cost and labor cost.
• Work with GM, Restaurant Manager & pastry chef.
• Recruiting, hiring, scheduling, reviewing and terminating staff.
• Manage staff schedules and minimize labor costs.
• Work a station for hourly employees when necessary.
• Quality control of all food, production, sanitation, line checks.
• Menu development with Executive Chef.
• Record recipes in Excel format.
• Ensure health and safety standards.
• Daily BOH system & procedure maintenance.
