Off The Hook is seeking a Facilities Maintenance Technician to upkeep refrigeration, HVAC, and general plant equipment across Southeast Louisiana locations. Responsibilities

  • Inspect, diagnose, and repair walk-in coolers, freezers, reach-in units, and ice machines; ensure food safety temp compliance.
  • Maintain rooftop HVAC units, split systems, exhaust fans, and makeup air units; perform belt and motor inspections.
  • Execute scheduled preventive maintenance for refrigeration and HVAC systems across locations.
  • Diagnose and repair commercial cooking equipment (fryers, grills, ovens, steam tables).
  • Calibrate cooking equipment temperatures, verify gas pressure, ignition, and burner performance.
  • Perform light electrical tasks and basic plumbing as needed; coordinate major repairs with licensed plumbers.
  • Inspect and maintain hood and Ansul fire suppression systems; coordinate certifications.
  • Maintain PM logs, service records, and manage work orders across locations.
  • Respond to emergency maintenance calls, including after hours and weekends.

About the Role:

The Facilities Maintenance Technician is responsible for the upkeep, repair, and preventive maintenance of refrigeration and HVAC systems, along with all other physical assets, across Off The Hook restaurant locations in Southeast Louisiana. This role places a strong focus on walk-in coolers, walk-in freezers, reach-in units, ice machines, and rooftop HVAC systems, ensuring all equipment, systems, and facilities operate safely, efficiently, and in compliance with health, safety, and brand standards. The ideal candidate is a self-directed, hands-on professional with strong refrigeration and HVAC experience, broad trade skills, and a strong sense of urgency in a fast-paced restaurant environment. This position reports to the Director of Project Management and Facilities Maintenance and serves locations throughout the Southeast Louisiana region.

Key Responsibilities

Refrigeration & HVAC

  • Inspect, maintain, diagnose, and repair walk-in coolers, walk-in freezers, reach-in refrigeration units, and ice machines; ensure food safety temperature compliance.
  • Perform maintenance and repairs on rooftop HVAC units, split systems, exhaust fans, and makeup air units, including filter replacement, coil cleaning, and belt and motor inspections.
  • Execute scheduled preventive maintenance for refrigeration and HVAC systems across assigned locations.

General Facilities

  • Diagnose and perform minor and complex repairs on commercial cooking equipment including fryers, grills, flat tops, ovens, steam tables, slicers, and mixers.
  • Calibrate cooking equipment temperatures and verify proper gas pressure, ignition, and burner performance.
  • Perform light electrical tasks including replacing fixtures, bulbs, ballasts, and switches, and troubleshooting circuit breakers and GFCI outlets within applicable code requirements.
  • Address plumbing issues including clogged drains, running toilets, leaking faucets, and floor drain maintenance; coordinate with licensed plumbers for major repairs.
  • Inspect and maintain hood and Ansul fire suppression systems; coordinate semi-annual certification with licensed contractors.
  • Maintain PM logs, service records, and equipment histories; prioritize and manage work orders across multiple locations.
  • Respond to emergency maintenance calls as needed, including after hours and weekends.
  • Maintain an organized, stocked maintenance vehicle and parts inventory.
Requirements for Success
  • Minimum 3 years of hands-on experience with commercial refrigeration and HVAC systems
  • Ability to read and interpret equipment manuals, wiring diagrams, and building schematics
  • Able to work a variety of shifts including days, evenings, weekends, and on-call as needed
  • Must be able to lift up to 50 lbs and work in confined spaces, on ladders, and on rooftops
  • Valid Louisiana driver's license with a clean Motor Vehicle Record (MVR)
  • Must be 18 years of age or older
Nice to Haves
  • EPA 608 Certification (Universal or Type II), or willingness to obtain within 90 days of hire
  • Restaurant or food service maintenance experience
  • Experience repairing commercial cooking equipment (fryers, grills, flat tops, ovens)
  • Light electrical and plumbing experience
  • Familiarity with hood and Ansul fire suppression systems
  • Experience managing work orders across multiple locations
