Job Description

Omni PGA Frisco Resort is hiring an Executive Sous Chef | Trick Rider to join our team. Omni Frisco PGA Resort features 127,000 sq ft of event space, 13 dining outlets, a luxurious spa, and a full entertainment district. The resort boasts two championship 18-hole golf courses and a third short course, providing excellent options for dining, events, and entertainment.

Trick Rider is a new-age supper club serving curated food and innovative cocktails, wines, and spirits. It offers a unique experiential dining experience with a modern twist on traditional fare, including top-shelf seafood, shellfish, and premium meats. Guests can enjoy seating ringside at the chef’s table or at the horseshoe bar, experiencing a performance that blends tradition with modern flair.

The Sous Chef will provide technical and administrative support to the Executive Sous Chef, ensuring the effective operation of the kitchen and food production outlets.

Responsibilities
  • Manage daily food production, preparation, and presentation to ensure quality and consistency in line with Omni standards.
  • Lead, train, develop, coach, and counsel kitchen associates; conduct performance reviews and foster a safe work environment.
  • Monitor and control labor and food costs; prepare reports and schedules to meet budgets while maintaining quality.
  • Assist in creating, costing, and implementing menus for outlets, banquets, and special events.
  • Schedule staff according to budget and forecasted business needs.
  • Support food and beverage outlet functions with kitchen support.
  • Oversee proper handling and tracing of food returns.
  • Ensure sanitation and cleanliness of all kitchen facilities and equipment, complying with health standards.
  • Maintain all kitchen equipment and walk-in coolers properly.
  • Communicate expectations clearly to staff and ensure adherence to guidelines.
  • Support efforts to achieve high food quality scores.
  • Manage sign-in and sign-out procedures for kitchen staff.
  • Perform other related duties as assigned.
Qualifications
  • Previous culinary leadership experience required.
  • Creativity and knowledge of current food trends essential.
  • Proven leadership skills with ability to train, develop, and motivate staff.
  • Excellent communication skills in English, both verbal and written.
  • Strong organizational skills with the ability to multitask.
  • Ability to use culinary tools and equipment proficiently and taste/smell effectively.
  • Serve Safe certified food manager.
  • Physical ability to lift up to 40 lbs, stand for extended periods, and work various shifts including weekends and holidays.
