Job Description

Omni PGA Frisco Resort is seeking a Executive Chef | Trick Rider to lead the culinary team for Trick Rider, a new age supper club. This key member of our culinary team oversees the efficient operation of the kitchen and food production for our flagship restaurant at the Omni PGA Frisco Resort.

Trick Rider is a modern supper club serving luxury, curated food, innovative cocktails, wines, and spirits. It features a lively atmosphere with top-shelf seafood, shellfish, and premium meats. Guests can enjoy the chef’s table or the horseshoe bar, experiencing a performance that honors tradition with a contemporary twist.

Responsibilities
  • Manage daily food production, preparation, and presentation to ensure quality and consistency in line with Omni standards.
  • Lead, train, develop, and motivate culinary associates, conducting reviews and fostering a safe, positive work environment.
  • Inspect all food service areas during operation to maintain high standards.
  • Monitor and control labor and food costs, preparing reports to meet or exceed budgets while maintaining quality.
  • Collaborate with the resort executive chef on menu creation, costing, and implementation.
  • Schedule staff according to budget and forecasted business levels.
  • Ensure proper sanitation and maintenance of kitchen facilities and equipment.
  • Comply with health and safety standards, including EcoSure regulations.
  • Maintain all kitchen equipment and walk-in coolers, ensuring cleanliness and proper food rotation.
  • Advise the resort executive chef on kitchen matters and uphold high standards of cleanliness and hygiene.
  • Ensure guest satisfaction through smooth daily operations.
  • Oversee purchasing and receiving standards, working with the storeroom manager and F&B controller.
  • Test and evaluate products for quality, yield, market price, and wastage.
  • Communicate expectations clearly to staff and ensure proper execution.
  • Support efforts to achieve Medallia food quality scores.
  • Manage sign-in/out procedures for kitchen staff.
  • Perform other duties as assigned.
Qualifications
  • Minimum 2 years of culinary management experience, preferably in a five Diamond upscale restaurant.
  • Excellent customer service skills; administrative experience preferred.
  • College degree or culinary certification preferred.
  • Proficiency in Microsoft Word, Excel, Delphi, or similar programs.
  • Food Handler’s certification or ability to obtain upon hire.
  • Strong communication skills, both written and verbal.
  • Excellent organizational skills.
  • Flexible schedule including nights, weekends, and holidays.
