Job summary

Hawks Cay Resort in Marathon, Florida seeks an Executive Sous Chef to support the Executive Chef in guiding culinary operations across our luxury resort venues, driving exceptional food quality and presentation that reflect brand standards.

You will lead kitchen teams, mentor staff, manage costs, ensure HACCP compliance, and partner with events teams to deliver memorable dining experiences for our guests.

Qualifications

• Minimum 5–8 years in luxury hotel/resort kitchens.
• Progressive chef experience; Sous Chef or Executive Sous Chef preferred.
• Formal culinary training or degree preferred.
• Strong leadership, communication, and organization.

Responsibilities

• Oversee culinary outlets and ensure quality, consistency, and plating.
• Lead kitchen operations and mentor staff to Hawks Cay standards.
• Collaborate on menu planning, seasonal offerings, and culinary concepts.
• Monitor food quality, portion control, and presentation.
• Manage food cost, inventory, purchasing, and waste to meet budgets.
• Ensure HACCP, sanitation, and health compliance.
• Coordinate with front-of-house and banquet teams for seamless service.
• Support large events, weddings, and VIP functions.
• Conduct performance evaluations and assist with hiring and scheduling.
