Job summary

Piero's Italian Cuisine in Las Vegas, NV is seeking a skilled Sous Chef to partner with the Executive Chef in directing daily kitchen operations and maintaining top-quality Italian cuisine.

You'll mentor line cooks, ensure food safety, and manage inventory, while leading in a fast-paced, upscale environment with a focus on consistency and teamwork. Evening and weekend shifts required.

Qualifications

• Minimum 3-5 years of progressive culinary leadership in upscale/fine dining.

Responsibilities

• Assist the Executive Chef in planning, organizing, and directing all kitchen operations.
• Lead daily kitchen operations in the Executive Chef's absence.
• Prepare and oversee authentic Italian cuisine with quality, consistency, and presentation.
• Ensure items are prepared to recipes, specifications, and plating standards.
• Supervise and develop line cooks, prep cooks, and back-of-house staff.
• Train staff on culinary techniques, food safety, and kitchen procedures.
• Maintain cleanliness, organization, and sanitation in the kitchen.
• Comply with health, safety standards, and company policies.
• Monitor food quality and address issues during service.
• Assist with inventory management, ordering, and FIFO.
