Job summary

The Club at Starr Pass in Tucson, AZ is seeking an Executive Sous Chef to lead daily kitchen operations, manage staff, and drive menu creation while maintaining top quality and profitability. This role requires strong leadership, food safety discipline, and the ability to train and motivate a high-performing team.

You will oversee production, inventory, and vendor relations, ensuring compliance with health codes and executing long-term culinary strategies for multiple restaurant outlets.

Qualifications

  • AA or equivalent from a two-year college or technical school.
  • 6 months to 1 year related experience or training.
  • Knowledge of sanitation standards and health codes.

Responsibilities

  • Oversee all kitchen operations and ensure high quality food across restaurant outlets.
  • Manage daily staff schedules and supervise cooks and stewards.
  • Develop and update menu specifications, recipes, and production forecasts.
  • Implement and maintain cost controls, inventory management, and ordering processes.
  • Ensure proper receiving, storage, temperature control, and rotation of ingredients.
  • Lead hiring, training, and ongoing development of kitchen staff.

General Purpose:

Manages the day-to-day operation of the kitchen toinclude:staffing, menu planning, ordering, vendor monitoring, food production, staff development, inventory,cateringand budgeting.

  • Overseesall food production operations at the facility and ensures the production of consistentlyhigh qualityfood for all the restaurant outlets.
  • 51% of each day is to be dedicated to management and supervisory duties
  • Manages daily staff schedules and task assignments.
  • Implements andmaintainscontrol procedures within the department, including daily food production charts, steak inventory and seafood charts, standardized recipes, use records, food costing sheets.
  • Creates,maintainsand updates menu specifications, recipes and pictures, and production forecasts.
  • Maintains and evaluates existing food concepts as well as thedevelopingof new ones to ensure the highest quality of food and profitability.
  • Inspects,selectsand uses only the freshest fruits, vegetables, meats, fish,fowland other food productsin order tomaintainthe highest standard in the preparation of all menu items.
  • Participates in long and short-term goals to achieve budgetaryobjectivesfor the Food and Beverage department.
  • Maintains a quality sanitation program in all areas.
  • Monitors to ensure proper receiving, storage (including temperature setting)and rotation of food productsso as tocomply withHealth Department regulations.
  • Prepares requisitions for supplies and food items for production.
  • Monitors all equipment in the kitchen to ensure cleanliness and proper workingcondition.
  • Selects,trainsand supervises kitchen staff in the proper preparation of menu items, equipmentoperationand safety measures.
  • Responsible for interviewing, hiring, training, planning, assigning, and directing work, evaluating performance, rewarding, and disciplining associates; addressing complaints and resolving problems.
  • Manages department members that mayinclude, butisnot limited to: Cooks and Stewards.
  • Assures that effective orientation and training are given to each new associate.Developsongoing training programs.
  • Monitors business volume forecast and plans accordingly in areas ofmanpower, productivity,costsand other expenses.
  • Incorporates safe work practices in job performance.
  • Regular and reliable attendance.
  • Performs other duties asrequired.

Education/Experience:

Associate’s degree (AA) or equivalent from two-year college or technical school; or six months toone yearrelated experience and/or training; or equivalent combination of education and experience.

Physical Demands:

Frequently stands, walks, uses hands,talksor hears. Regularly reaches with hands and arms,tastesor smells. Occasionally sits, climbs, balances, stoops, kneels, crawls or crouches.Frequently lifts up to 25 pounds, occasionally lifts up to 100 pounds.

Occasionally works in wet or humid conditions (non-weather) and in extreme heat or cold (non-weather).Occasionally works in outdoor weather conditions and may come into contact with toxic or caustic chemicals.Noiselevel is moderate.

  • Ability to read and speak English may berequiredin order toperform the duties of the job (e.g.the associates may require to communicate with English speaking customers or co-workers, the manuals for the equipment the associates may use are in English).
  • Good working knowledge of accepted sanitation standards and applicable health codes.
  • Knowledge of food and beverage products, proper preparation and presentation of food and beverage items.
