Qualifications

  • 4+ years of kitchen management experience, including 3-5 years as Executive Sous Chef.
  • Ability to communicate basic ideas clearly in spoken English.
  • Must pass Cook I test and complete a formal tasting audition.

Job Overview: Manages culinary operations for multiple outlets as assigned by the Executive Chef. Supports the casino's goals by ensuring a quality dining experience appropriate for each venue. Ensures efficiency in culinary operations related to production, quality control, administration, and cost control.

Empower Your Future: The Work You’ll Lead:

  • Handle complex cooking assignments to ensure high-quality products.
  • Assist in supervising the entire kitchen operation for assigned venues.
  • Recruit, interview, hire, promote, train, develop, manage performance, and handle disciplinary actions and terminations for kitchen staff.
  • Ensure food and labor costs align with budgets. Use performance indicators to identify functions needing change to achieve cost-effective, quality restaurant experiences. Make recommendations to the Executive Chef.
  • Oversee staff scheduling, review kitchen operations, and recommend improvements based on trends and business levels.
  • Establish quality and taste standards; conduct taste tests to ensure standards are met; ensure sanitation standards are maintained.
  • Order food using approved purchasing software; maintain inventory control and rotation.
  • Complete necessary paperwork such as meal guides, purchase orders, and menu specifications.
  • Resolve guest and team member complaints and concerns.
  • Plan, develop, and implement menus and menu items.

Job Requirements:

  • High school diploma or GED.
  • Four years of kitchen management experience; 3-5 years at the Executive Sous Chef level managing multiple outlets.
  • Experience with word processing, spreadsheets, databases, and email software.
  • Ability to communicate basic ideas clearly in spoken English.
  • Basic knowledge of sanitation, quality control, recipe interpretation, and prep duties.
  • Must pass Cook I test and complete a formal tasting audition before the Executive Chef.
  • Certified Food Service Manager Certificate or ability to obtain within one year.
  • Valid Class D driver’s license may be required with a good driving record.
