Job summary

MGM Resorts International is seeking an Executive Chef for Scarpetta at The Cosmopolitan on the Las Vegas Strip. You will lead the culinary vision and main commissary operations, guiding a high-caliber team to deliver signature Italian cuisine with luxury service.

You will drive budgets, menu development, training, and ensure top-tier food quality, safety, and guest satisfaction in a dynamic, entertainment-driven environment.

Qualifications

• 3+ years directing high-volume or fine-dining kitchen operations as an Executive Chef.
• Bachelor’s degree preferred.
• Bilingual, English as the primary or secondary language preferred.

Responsibilities

• Owns, leads and oversees daily commissary kitchen operations, budgets, labor productivity, scheduling, and inventory control.
• Represents the commissary kitchens in divisional, property or corporate meetings and drives menu strategy.
• Ensures health, sanitation and cleanliness standards are met while coaching staff and managing HR responsibilities.
• Collaborates with directors and kitchen teams to ensure seamless product delivery across kitchens and time standards.
