Job summary

Waterford Hotel Group is seeking an Executive Chef to lead the hotel’s culinary division, overseeing restaurant services, room service, and employee dining. You will drive food quality, presentation, and operational controls across all culinary outlets.

You will manage labor productivity, food cost, sanitation, and associate engagement while collaborating with F&B, events, sales, and engineering to execute daily operations and large-scale events.

Qualifications

• Minimum 5–7 years of progressive culinary leadership experience in a full-service hotel, resort, convention hotel, or comparable high-volume hospitality environment.

Responsibilities

• Provide overall culinary leadership and oversight for the hotel’s restaurants for breakfast, lunch & dinner's service, room service, concierge lounge, and employee dining.
• Oversee daily preparation, production, execution, and presentation of food for restaurants, banquets, catering, room service, lounges, employee dining, and other hotel outlets.
• Maintain a visible presence in kitchens, especially during peak meal periods and high-occupancy times.
• Develop and refresh outlet menus based on seasonality, guest preferences, and financial performance.
• Ensure menus are properly executed and staff trained on recipes, plating, portions, and allergen procedures.
• Establish clear communication for menu changes, specials, substitutions, dietary needs, and 86’d items.
• Inspect culinary areas for organization, cleanliness, and readiness; maintain sanitation standards.
• Lead banquet/catering operations, ensuring Marriott standards for quality, timing, and guest satisfaction.
• Partner with the Banquet Chef on planning high-volume conventions, weddings, galas, and other catered events.
