Job summary

Chartwells Higher Education seeks an Executive Chef III for Bobcat Den (late night) at Quinnipiac University in Hamden, CT. You will lead culinary operations, develop menus, manage budgeting and food costs, and mentor staff to deliver exceptional campus dining experiences.

The role involves supervising chefs and cooks, ensuring food quality, and maintaining safety standards while driving innovation in a fast-paced university setting.

Qualifications

• A.S. degree or equivalent experience in culinary arts.
• 3+ years of progressive culinary or kitchen management experience.
• Experience in high-volume, hands-on foodservice operations.
• Proficiency with computers and basic software tools.

Responsibilities

• Plan regular and modified menus according to established guidelines, follow standardized recipes, portioning and presentation standards.
• Complete and apply daily production worksheets and waste log sheets.
• Supervise and train chefs, cooks and other team members on food preparation, safety, equipment operation, and sanitation.
• Ensure the implementation of culinary standards, including recipe compliance and food quality.
• Manage inventory of food and non-food supplies, ensuring availability and cost control.
• Adhere to federal, state, and local health and sanitation regulations and site procedures.
• Assist in forecasting food and labor costs and monitor financial results.
• Foster strong client relationships to align programs with objectives and drive satisfaction.
• Perform other duties to support efficient dining service operations.
