Job Summary

As the Executive Chef, you will oversee kitchen operations, ensuring a safe, sanitary environment for staff. You will prepare or supervise meal preparation according to Chartwells K-12 standards. This role suits an energetic, entrepreneurial culinary professional.

Key Responsibilities:

1. Plan menus in accordance with established guidelines.
2. Follow recipes, portioning, presentation standards, and complete production worksheets and waste logs. Taste meals to ensure quality.
3. Train staff in food prep, safety, equipment use, and sanitation per company and regulatory standards.
4. Maintain cleaning and maintenance schedules for equipment and facilities, ensuring compliance.
5. Manage inventory within guidelines, ensuring availability of necessary supplies.
6. Decide on leftover food utilization within company policy.
7. Comply with health and sanitation regulations, evidenced through audits.
8. Adhere to safety policies, report incidents as required.
9. Participate in department meetings and professional development.

Preferred Qualifications:

• A.S. degree or equivalent experience.
• 3-5 years of progressive culinary/kitchen management experience.
• Extensive catering experience is a plus.
• Experience in high-volume, complex foodservice operations.
• Institutional and batch cooking experience.
• Hands-on chef experience required.
• Knowledge of food trends, sanitation, food costs, and presentation.
• Proficiency with Microsoft Office, Outlook, email, internet.
• ServSafe certification preferred.
