Job Summary

As the Executive Chef at Breck School in Minneapolis, MN, you will lead the dining program for an all-inclusive lunch service for students from Pre-K through 12th grade. This role is ideal for a culinary leader passionate about scratch cooking, quality service, and community-building. You will oversee a respected dining program within a close-knit school community, making a positive impact on students' daily lives through food.

Key Responsibilities:
  1. Plan regular and modified menus according to established guidelines.
  2. Follow standardized recipes, portioning, and presentation standards. Complete and utilize daily production worksheets and waste logs. Taste meals to ensure quality.
  3. Train kitchen staff in food preparation, safe handling, equipment operation, food safety, and sanitation based on company and regulatory standards.
  4. Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas, ensuring staff adherence.
  5. Maintain inventory of food and supplies within guidelines, ensuring necessary products are available.
  6. Decide on the utilization of leftover food products within company guidelines.
  7. Comply with health and sanitation regulations, evidenced through audits.
  8. Follow safety policies and procedures, including reporting incidents.
  9. Participate in departmental meetings, staff development, and professional programs as appropriate.
Preferred Qualifications:
  • A.S. degree or equivalent experience.
  • Minimum of 3 years as an Executive Chef.
  • Catering experience for small to large events.
  • Experience in high-volume, complex foodservice operations is highly desirable.
  • Institutional and batch cooking experience preferred.
  • Hands-on chef experience required.
  • Flexibility to support evening and weekend events.
  • Knowledge of food and catering trends, focusing on quality, sanitation, cost controls, and presentation.
  • Proficiency with Microsoft Office, Outlook, email, and internet.
  • Willingness to participate in client satisfaction activities.
  • ServSafe certification is highly desirable.
