Job Summary

Working as the Executive Chef, you will oversee kitchen operations while maintaining a safe and sanitary work environment. You will prepare or direct the preparation of meals according to corporate guidelines. This role is ideal for an energetic, entrepreneurial culinary professional.

Key Responsibilities
  1. Plan regular and modified menus according to established guidelines.
  2. Follow standardized recipes, portioning, and presentation standards. Complete and utilize daily production worksheets and waste logs. Taste meals to ensure quality.
  3. Train kitchen staff in food preparation, safe handling, equipment operation, food safety, and sanitation based on company and regulatory standards.
  4. Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas. Ensure staff follows these schedules.
  5. Maintain inventory of food and supplies within guidelines, ensuring necessary products are available.
  6. Decide on the utilization of leftover food products within company policies.
  7. Comply with health and sanitation regulations, as evidenced by audits.
  8. Follow safety policies and report incidents as required.
  9. Participate in departmental meetings, staff development, and professional programs.
Preferred Qualifications
  • A.S. or equivalent experience.
  • 5+ years of progressive culinary/kitchen management experience, depending on formal education or training.
  • Extensive catering experience is a plus.
  • Experience in high-volume, complex foodservice operations is highly desirable.
  • Experience with institutional and batch cooking.
  • Hands-on chef experience is required.
  • Knowledge of food and catering trends, quality, sanitation, cost controls, and presentation.
  • Proficiency with computers, including Microsoft Office, Outlook, email, and internet.
  • Willingness to participate in client satisfaction programs.
  • ServSafe certification is highly desirable.
