Job Summary

Job Summary:

As the Executive Chef, you will oversee kitchen operations while maintaining a safe and sanitary work environment. You will prepare or direct the preparation of meals according to corporate guidelines. This role is ideal for an energetic, entrepreneurial culinary professional.

Key Responsibilities:

  • Plan menus according to established guidelines
  • Follow standardized recipes, portioning, and presentation standards. Complete and utilize daily production worksheets and waste logs. Taste meals to ensure quality.
  • Train kitchen staff in food preparation, safe handling, equipment operation, food safety, and sanitation based on company and regulatory standards.
  • Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas. Ensure staff follows these schedules.
  • Maintain inventory of food and supplies within guidelines, ensuring necessary products are available.
  • Decide on the utilization of leftover food products within company guidelines.
  • Comply with health and sanitation regulations, evidenced through audits.
  • Follow safety policies and procedures, including reporting incidents.
  • Participate in departmental meetings, staff development, and professional programs.

Preferred Qualifications:

  • A.S. or equivalent experience
  • 5+ years of progressive culinary/kitchen management experience, depending on formal degree or training
  • Extensive catering experience is a plus
  • Experience in high-volume, complex foodservice operations is highly desirable
  • Institutional and batch cooking experience
  • Hands-on chef experience required
  • Knowledge of food and catering trends focusing on quality, sanitation, food cost controls, and presentation
  • Proficiency with computers, including Microsoft Office, Outlook, Email, and Internet
  • Willingness to participate in client satisfaction activities
  • ServSafe certification is highly desirable
