Job Summary

As the Executive Chef, you will oversee kitchen operations across various accounts in the Milwaukee market, maintaining a safe and sanitary environment for staff. You will prepare or direct meal preparations in accordance with corporate standards. This role offers an exciting opportunity for an energetic culinary professional to oversee a single unit.

Key Responsibilities:

• Planning regular and modified menus according to established guidelines
• Following standardized recipes, portioning, presentation standards, and utilizing daily production worksheets and waste logs. Tasting meals to ensure quality
• Training kitchen staff in food preparation, safety, equipment operation, and sanitation standards
• Establishing and maintaining cleaning and maintenance schedules for equipment and work areas
• Maintaining inventory within guidelines, ensuring necessary supplies are available
• Deciding on the utilization of leftover food products within company guidelines
• Complying with health and sanitation regulations, as evidenced by audits
• Following safety policies and participating in departmental meetings and staff development

Preferred Qualifications:

• 2+ years of executive chef experience, preferably in healthcare
• Culinary arts degree or equivalent management experience
• Multi-unit/outlet experience is a plus
• Experience with high-volume, complex foodservice operations and catering
• Institutional and batch cooking experience
• Hands-on chef experience is required
• Knowledge of food and catering trends focusing on quality, sanitation, costs, and presentation
• Proficiency with Microsoft Office, Outlook, and Internet use
• ServSafe certification
