Job summary

Vanderbilt University Campus Dining seeks a Chef De Cuisine to lead day-to-day culinary operations, drive high-standard menus, and partner with campus leadership to manage costs and quality for a diverse dining program.

The role reports to the General Manager and collaborates with staff, students, faculty and external partners to deliver exceptional dining experiences while maintaining adherence to policies and budgets.

Qualifications

  • High school diploma or GED required.
  • Associate degree in Culinary Arts preferred.
  • 5 years of related culinary management experience.
  • Strong business judgement including financial and personnel management.
  • Experience with menu management systems encouraged.
  • Proficiency in Word, Excel, Outlook.
  • Strong communication and interpersonal skills.
  • ServSafe Manager certification within 30 days of hire.
  • AllerTrain U certification within 30 days of hire.

Responsibilities

  • Promote the vision and core values of Vanderbilt Campus Dining.
  • Forecast annual kitchen budget and monitor the unit's budget.
  • Develop and execute high-performance, local, nutrient-dense menus.
  • Oversee kitchen activities including food prep, presentation, sanitation.
  • Supervise hourly union staff and ensure CBA compliance.
  • Coordinate with Director of Culinary Operations and GM on menus.
  • Design seasonal menus and manage menu system.
  • Ensure guest satisfaction and drive engagement.
