Job Summary

As the bench Executive Chef, you will be responsible for floating between several hospital accounts in the Elk Grove Village, Chicagoland, and surrounding suburbs in the Illinois market. This role will supervise kitchen operations at an assigned hospital while maintaining a safe and sanitary work environment for the staff. You will prepare or direct the preparation of meals in accordance with corporate programs and guidelines. The executive chef may have the opportunity to be assigned a permanent home unit after a designated period.

Key Responsibilities:
  1. Plans regular and modified menus according to established guidelines
  2. Follows standardized recipes, portioning and presentation standards. Completes and uses daily production worksheets and waste log sheets. Tastes completed meals to ensure quality
  3. Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on Company and regulatory standards
  4. Establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas. Ensures that kitchen staff follows and completes schedules as assigned
  5. Maintains inventory of food and non-food supplies to stay within established guidelines while assuring that vital product is available when needed
  6. Makes all decisions regarding utilization of leftover food products staying within Company guidelines for such products
  7. Follows federal, state and local health and sanitation regulations and department sanitation procedures as evidenced through local health department and third-party audits
  8. Follows facility, department, and Company safety policies and procedures to include occurrence reporting
  9. Participates and attends departmental meetings, staff development, and professional programs, as appropriate
Preferred Qualifications:
  1. 2 years of experience in an executive chef role with 3 to 5 years of culinary management, or combination to include a culinary arts degree is required
  2. Hands on culinary management experience in hospital, senior living, or related healthcare setting
  3. High volume, institutional, batch cooking, and catering experience in a fast paced environment
  4. Extensive knowledge of food, culinary, and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
  5. ServSafe certification
  6. Must be experienced with computers; to include Microsoft Office (Word, Excel and Power Point), Outlook, E-mail and the Internet
