Job summary

Shamin Hotels in Richmond, VA seeks an Executive Chef to lead the hotel's culinary operations across outlets, banquets, and room service. You will design menus reflecting brand standards, ensure food quality, and manage kitchen costs and schedules.

You will recruit, train, and develop a high-performing culinary team, uphold health and safety standards, and collaborate with Sales and Events to deliver memorable dining experiences for guests and events.

Qualifications

  • Culinary degree or equivalent professional experience preferred.
  • Five or more years of progressive culinary leadership experience.

Job Title: Executive ChefDepartment: Food & Beverage / CulinaryReports To: General Manager / Director of Food & BeveragePosition SummaryThe Executive Chef is responsible for the overall leadership, management, and success of the hotel’s culinary operations.This role oversees menu development, food quality, cost control, and kitchen team performance.The Executive Chef ensures exceptional dining experiences for guests while maintaining operational efficiency and compliance with brand and safety standards.This role leads the culinary team in alignment with the company’s TOP Values: Team Up, Own It, Passionately Serve.Key ResponsibilitiesOversee all kitchen operations including restaurants, banquets, catering, and room service as applicable.Develop and design menus that reflect brand standards, seasonal offerings, and guest preferences.Ensure consistent food quality, presentation, and portion control across all outlets.Supervise, train, and develop kitchen team members to maintain high performance and engagement.Manage food and labor costs to meet budget and profitability goals.Maintain inventory levels and oversee ordering, receiving, and storage of food and supplies.Ensure compliance with all health, safety, and sanitation standards including local and state regulations.Conduct regular kitchen inspections to maintain cleanliness and organization.Collaborate with Sales and Events teams to execute successful banquets and special events.Create and standardize recipes and ensure adherence to preparation methods.Monitor guest feedback and implement improvements to enhance the dining experience.Develop schedules to ensure appropriate staffing levels for business needs.Promote a culture of safety, accountability, and continuous improvement within the kitchen.Support recruitment, onboarding, and retention of culinary team members.Other duties as assigned.QualificationsCulinary degree or equivalent professional experience preferred.Five or more years of progressive culinary leadership experience required, preferably in a hotel environment.Strong knowledge of food safety standards and sanitation regulations.Proven ability to manage food and labor costs effectively.Experience in menu development, banquet execution, and high-volume food production.Strong leadership, coaching, and team development skills.Ability to work in a fast-paced environment while maintaining high standards.Flexible schedule including evenings, weekends, and holidays as needed.Physical RequirementsAbility to stand and walk for extended periods throughout the shift.Ability to lift and carry up to 50 pounds regularly including food products and kitchen supplies.Frequent bending, reaching, pushing, and pulling in a kitchen environment.Ability to work in high-temperature environments including exposure to heat, steam, and open flames.Manual dexterity to safely operate kitchen equipment and tools.Work EnvironmentWork is performed in a commercial kitchen environment with exposure to heat, noise, and fast-paced conditions.Frequent interaction with kitchen staff, leadership, and occasionally guests is required.The role requires strong attention to detail, organization, and the ability to manage multiple priorities.Core Competencies (TOP Values Alignment)Team Up: Collaborate across departments to ensure seamless execution and support team members to achieve shared goals.Own It: Take accountability for results while demonstrating strong attention to detail, ownership, and follow-through.Passionately Serve: Create memorable experiences through exceptional food quality and service while maintaining a positive, solution-oriented approach.Who are we looking for?Are you someone who values teamwork, takes ownership of your role, and is passionate about serving our guests with warmth and hospitality?
