Responsibilities:
  1. Supervise, coordinate, and participate in activities of kitchen staff, including Chef/Kitchen Managers, Cooks, and other personnel.
  2. Adhere to concessions and beverage policies.
  3. Estimate food consumption and requisition or purchase supplies.
  4. Ensure quality and quantity of foodstuffs meet standards.
  5. Develop recipes based on food type.
  6. Supervise food preparation and service staff.
  7. Cook or prepare food according to recipes.
  8. Prepare meats and other ingredients for cooking.
  9. Portion and garnish foods appropriately.
  10. Plan menus and direct kitchen operations.
  11. Maintain time and payroll records.
  12. Develop a high-performance department with internal successors.
  13. Foster an environment of trust, respect, and confidence.
  14. Recognize, coach, and discipline staff as needed.
  15. Maintain documentation of performance and incidents.
  16. Follow the organization’s Code of Business Conduct and support diversity and affirmative action.
  17. Supervise all kitchen employees and duties, ensuring compliance with policies and laws.
Qualifications:
  • Bachelor’s degree and 5-10 years’ related experience or equivalent.
  • Ability to interpret safety and operational documents.
  • Effective communication skills.
  • Proficiency in calculations and problem-solving.
  • Ability to interpret various instructions.
  • Licensing with Pennsylvania Racing and Gaming Commissions.
  • Food Handler, ServSafe, and Pennsylvania Responsible Alcohol Management certifications.
