• Knowledge of diet restrictions and ability to adapt recipes accordingly.
• Ability to measure and scale ingredients accurately.

Responsibilities

• Reviews production sheets and recipes to ensure quality and quantity for daily items; maintains time and production records.
• Measures and mixes ingredients; utilizes kitchen utensils and equipment to prepare soups, salads, gravies, and casseroles.
• Bakes, roasts, broils and steams meat, fish, vegetables; carves and slices meats and cheese.
• Garnishes, displays and serves food items per standards and recipes.
• Ensures proper storage and rotation of inventories; monitors temperatures to ensure safe handling.
• Follows department standards for safe handling and sanitation; maintains temperature logs.
• Monitors portioning and wastes; prepares in small batches to control waste and costs.
• Demonstrates knowledge to provide age-appropriate care per department policies and procedures.
