Qualifications

• Five+ years of culinary experience in high end sushi restaurants.
• Extensive knowledge of sushi preparation and presentation.
• Experience leading sushi cooks and assistants.

Responsibilities

• Create and oversee daily sushi menu procedures and costs.
• Schedule sushi staff and ensure quality, speed, and service.
• Train kitchen staff on menu standards and safety practices.
• Coordinate with Culinary Director on ingredient use and pricing.
• Maintain HACCP and local food safety compliance.
