Job summary

Din Tai Fung North America is seeking a Dumpling Trainee to prepare, fold, and steam dumplings in a show kitchen environment at our Arcadia location. You will start with hands-on training to master dumpling techniques, then transition to the Dumpling Prep role with a competitive wage increase.

This entry-level role emphasizes learning, teamwork, and maintaining a clean, organized workspace while supporting busy kitchen operations and adhering to safety procedures.

Qualifications

• Friendly, energetic and highly motivated in a fast-paced, team-oriented environment.
• Dumpling experience is not required.
• Experience in prep, especially with dough (pastry, pizza, etc.), is a plus.
• Open availability to work various shifts.
• Eager to learn and take on new tasks.
• Ability to stand for long periods of time.

Responsibilities

• Prepares, measures, and cuts dough
• Rolls dumpling/bun skins
• Stuffs, closes, and arranges dumplings/buns in a steamer
• Adds meat and allergen identifiers
• Steams dumplings/buns
• Maintains a clean working space and dumpling room
• Labels items per regulations and attends monthly staff meetings
• Keeps kitchen areas clean and sanitized
• Organizes items in walk-in coolers and freezers
• Lifts/moves boxes, bags, chairs, and tables (up to 50 pounds)
• Assists with deep cleaning of the kitchen
• Maintains confidentiality of SOPs and recipes

COMPENSATION: $22.50/hr

The base salary or hourly wage range for this role will vary based on multiple factors, including but not limited to prior experience, relevant expertise, current business needs, and market factors. About the Role:

A Dumpling Trainee is tasked with preparing, putting together, folding, and steaming dumplings for guests. They operate in a show kitchen, requiring them to uphold a tidy and professional look.

Training Expectations:

Your journey at Din Tai Fung will begin as a Dumpling Trainee. Our hands‑on dumpling training program is designed to provide you with the skills and knowledge you need to ensure you have the tools for success. Upon completion of the program, graduates will transition into the Dumpling Prep role, accompanied by a competitive hourly wage increase. Job Responsibilities & Tasks:

• Maintains confidentiality regarding all propriety information, including but not limited to recipes and Standard Operating Procedures (“SOP’s“)
