Responsible for the proper cleaning, sanitizing, and storage of all cooking utensils, service ware, and kitchen equipment to ensure an efficient and safe kitchen environment. Supports cooks, servers, and other kitchen staff by maintaining cleanliness and organization in all back-of-house areas, contributing to a positive dining experience for guests.

This description is a summary of primary responsibilities and qualifications. The job description is not intended to include all duties or qualifications that may be required now or in the future. The Hotel operates 24 hours a day and 7 days a week, so operational demands require variations in shift days, starting times, and hours worked in a week.
Promptly and carefully sort soiled wares for efficient processing through dish or pot machines.
Operate dishwashing equipment safely and effectively, ensuring all wares are thoroughly cleaned and properly stored.
Maintain cleanliness of the dish machine and ensure it is filled with water according to hotel standards.
Clean kettles, tilt skillets, pots, and pans in a timely manner to support kitchen production.
Perform general cleaning tasks using approved hotel cleaning products, maintaining compliance with health department regulations.
Maintain clean, dry floors at all times to reduce the risk of slip-and-fall accidents.
Sort and separate linen from trash and debris appropriately.
Follow all company policies and procedures.
Adhere to safety and security procedures, including proper use of protective equipment.
Understand and follow fire prevention and emergency protocols.
Immediately report any unsafe conditions, accidents, injuries, or property damage to management.
Maintain a neat, clean, and well-groomed appearance in accordance with grooming standards outlined in the team member handbook.
Assist with additional cleaning duties or kitchen tasks as directed by management.
Support and collaborate with other kitchen team members as needed.
Knowledge of proper ware-washing techniques and procedures to support guest satisfaction.
Ability to operate a commercial dishwashing machine in compliance with health and hotel standards.
Basic knowledge of safe chemical use and ability to read and apply product labels and safety data sheets.
Ability to work efficiently in a fast-paced environment with a strong attention to detail.
Manual dexterity to handle kitchen equipment such as knives, spatulas, tongs, etc.
Ability to lift, carry, or push up to 100 lbs using carts or hand trucks.
Ability to push/pull heavy service carts and bins.
Frequent and prolonged standing, bending, stooping, twisting, reaching, walking, and lifting.
Must be able to work in hot and humid environments and maintain physical stamina throughout long shifts.
Ensure cleanliness and sanitization of all dishware, cookware, and utensils—washing both by hand and using equipment.
Maintain organization and cleanliness in the dish area and throughout the kitchen.
Support safety efforts by promptly cleaning spills and maintaining clean floor and wall surfaces.
Complete special cleaning tasks and deep cleaning projects as assigned.
Prior dishwashing or kitchen experience is a plus.
Ability to communicate in basic English.
Must be able to operate dishwashing equipment safely and handle dishware with care.
Requires standing for extended periods, full mobility, and the ability to lift up to 50 lbs regularly and up to 70 lbs occasionally.
