Overview:

The Director of Food & Beverage manages and oversees multiple dining locations and special dining events. The individual must possess a keen sense towards the leadership of standards for the Food & Beverage team. The Director of Food & Beverage has proven acceleration with standards of service and an unwavering ability to mentor those expectations.

The Director of Food & Beverage's primary purpose is to develop and oversee the daily food and beverage service operations and ensure that all Paws Up standards are coordinated to exceed guest expectations. This position will lead other Managers to uphold the standards of service and remain within safety guidelines. A candidate must also possess an uplifting approach to teaching those skills at all levels.

Responsibilities:

  • Create an excellent work environment, centered on teamwork and mutual respect.
  • Hands-on service and floor presence to oversee that all expectations are being met.
  • Collaborate with the Food and Beverage team to create and implement new ideas.
  • Leading the development and training of all team members to maintain a high level of service.
  • Develop team members using performance review systems, cross training, and developmental planning.
  • Ensure that all dining outlets provide exceptional and curated experiences to all guests.
  • Maintain exceptional guest service and facilities by creating an approachable and healthy environment through selective staffing and training programs.
  • Complete scheduled inventories and ensure proper administration processes are followed.
  • Work with groups and planners to organize events and experiences.
  • Responsible for Front of House scheduling that align with budgeted labor targets and resolving deviations and improper scheduling with the correct Managers.
  • Ensure that responsible expenditures are in place with close monitoring including revenue to payroll ratio. Ensure appropriate forecasting systems are utilized.
  • Ensure compliance with federal, state, and local food sanitation and safety regulations. Must remain knowledgeable of current State and federal laws and guidelines and communicate this information to other team members.
  • Responsible for ensuring the service team is properly trained and motivated to deliver exceptional service and to create memorable moments for our guests.
  • This will include interactive dining, table-side service, promoting specialty or signature items, etc.
  • Must be current on state regulations regarding alcohol with a strong focus on alcohol controls/systems/logs.
  • Implement and effectively execute specific training programs timely and consistently to ensure team members are providing guests with our expectations.
  • Attend all Department Head staff meetings, Food & Beverage meetings, as well as hold consistent service training meetings and special training sessions when needed.
  • Ensure service recovery programs are in place, staff is properly trained to execute and being properly utilized as set forth by management.
  • Executes all menus, promotions, and programs.
  • Ensure that daily walkthroughs and stand ups are being conducted in all Front of House areas.

Requirements:

  • Associate or bachelor’s degree in hospitality management or equivalent experience.
  • 10 years’ experience in the food and beverage, culinary, event management, or related professional area.
  • Experience at a Forbes star rated property, and/or a Michelin star/key rated property.
  • Advanced knowledge of principles and practices within the Hospitality profession. This includes experience and knowledge required for management of people, complex problems and food and beverage management.
  • Ability to investigate and analyze current activities or information and make logical conclusions and recommendations.
  • Ability to make occasional decisions which are generally guided by established policy and procedures. Supervisory/management communication skills.
  • Must possess the following strengths: high energy, motivational educator, effective communicator, effective in providing exceptional service and ability to always improve.
  • Valid Driver’s License.
