A leading company in luxury hospitality is seeking a Director of Food and Beverage responsible for overseeing all food and beverage operations at their casino resort. The Director of Food and Beverage is responsible for the strategic oversight, leadership, and execution of all front-of-house food and beverage operations across the resort—including restaurants, bars, lounges, casino floor, poolside service, in-room dining, banquet events, and concert venues. This role plays a key part in enhancing the Guest experience, optimizing profitability, and sustaining Thunder Valley’s AAA Four Diamond standards. This leader must champion innovation, team development, and operational excellence while embracing evolving industry trends and aligning with brand values. Responsibilities must be performed in accordance with all Company standards, policies, and procedures.
Essential Functions:
1. Lead by example in practicing Thunder Valley Casino Resort’s “ELITE” guest service standards and consistently exceed AAA Four Diamond expectations.
2. Monitor and ensure exceptional food and beverage quality, presentation, and service delivery across all venues.
3. Implement and integrate new technologies that improve guest interaction, mobile ordering as it becomes available, real-time feedback, and operational efficiencies.
4. Foster a culture of continuous improvement within all food and beverage Team Members at the AAA Four Diamond level of service standard.
5. Oversee scheduling, training, performance evaluations, and mentoring of management staff, with emphasis on coaching and development.
6. Develop and execute labor strategies that support team retention, growth, and succession planning.
7. Design and implement structured development programs for emerging leaders within the food and beverage department, including cross-training, leadership mentoring, and succession planning. Foster a culture of empowerment and professional growth.
8. Analyze revenue trends, guest feedback, and competitive benchmarks to adjust operating strategies and drive profitability.
9. Assist with special projects as assigned with a focus on all restaurants, banquets, in-room dining, and casino beverage service.
10. Follow assigned tasks as directed by the VP of Food and Beverage, allocating resources and time to appropriately service-related operations.
11. Monitor food and beverage revenue generation in all restaurants and beverage operations, assisting with P&L explanations and month end reporting.
12. Maintain knowledge of all Thunder Valley regulations as they apply to the Food and Beverage Division.
13. Develop the restaurant and casino beverage operating strategy in order to provide innovative and exciting Guest experiences that emulate Thunder Valley’s business model.
14. Participate in the preparation of the annual business plan, and ensure food and beverage front-of-house operations are adequately represented.
15. Coordinate the organizational and administrative functions in all areas of restaurants, food court, and beverage operations to ensure implementation of business objectives while remaining in compliance with Thunder Valley standards.
16. Remain current on luxury hospitality and F&B industry trends to enhance Guest experiences and maintain brand positioning in order to enhance Thunder Valley’s competitive advantage.
17. Make recommendations for modernization of equipment, service methods, and presentation to improve Guest satisfaction while maintaining profitability.
18. Ensure that each F&B enterprise is accounted for separately as an individual profit center and is managed by a team who are accountable for their profitability.
19. Monitor closely the profitability of all departments by providing solutions to improve problem areas and assist in implementing corrective measures.
20. Handle Guest complaints effectively in close liaison with other departments to ensure brand standards and Guest satisfaction are maintained.
1. Five (5) years of senior leadership experience in food and beverage operations within a luxury casino resort, ideally with a collective bargaining agreement and entertainment venues.
2. Previous experience managing unionized environments with a strong understanding of labor contracts, conflict resolution, and progressive discipline.
3. Bachelor’s degree in Hospitality Management or related field preferred; high school diploma or equivalent required.
4. Demonstrated expertise in operational management within a Four Diamond or equivalent hospitality setting.
5. Excellent written and verbal communication skills, with the ability to lead and inspire diverse teams.
6. Flexibility to work weekends, evenings, and holidays as required by business needs.
7. Ability to delegate, empower, and evaluate management and hourly Team Members to achieve desired objectives with minimal supervision.
8. Sound judgment in all decision-making responsibilities, even when dealing with difficult situations, where Guests, Team Members and the overall long-term profitability are not adversely impacted.
9. Ability to work under pressure, make sound decisions, and manage complex Guest and Team Member interactions.
10. Proficiency in utilizing technology platforms including POS systems, reservation software, and performance analytics.
11. Strong financial acumen including experience with P&L management, budgeting, labor modeling, and revenue optimization.
12. Complex understanding of station and floor shift allocations within bided shifts, managing labor to demands and ensuring AAA Four Diamond Guest Service while meeting or exceeding appropriate KPIs.
13. Must be at least 21 years of age.
14. Must be able to obtain UAIC Tribal Gaming License.

1. Requires normal, corrective vision range, the ability to see color and the ability to distinguish letters, numbers and symbols.
2. Requires walking, reaching, turning, bending, lifting, carrying, observing, hearing, sitting.
3. Manual dexterity to operate job related equipment.
