Job summary

Shaker Place Rehabilitation & Nursing Center seeks a Director of Dietary Services to oversee all food service operations for residents and staff. The role reports to the executive director and supervises all food service personnel, ensuring high-quality meals and strict sanitary standards.

The position requires planning and directing budgets, staff development, and interactions with dietitians for special diets, with responsibilities across policy, procurement, and reporting.

Qualifications

• Promotional: either 24 months as a dietetic service supervisor with eligible NY RD license, or 48 months as an assistant supervisor with RD license.

Responsibilities

• Directs all phases of the food service operation to assure adequate and efficient food service for residents and employees.
• Establishes policies and procedures for the food service program at the facility;
• Assists in the preparation and maintenance of the food service budget;
• Plans, directs and participates in in-service training programs including orientation of new personnel and continuing staff development;
• Performs routine inspections of the food service operation for compliance with state, federal and facility regulations;
• Recommends purchases of new equipment and repairs equipment;
• Interviews vendors for supplies and equipment;
• Visits with residents to determine the excellence of meals and service as necessary;
• Maintains sanitary hygiene of the food service program;
• Coordinates the food service operation with other services in the facility;
• Maintains records and prepares reports.

Job description

The director of dietary services is responsible for administering large scale food services and providing nutritional care for residents at Shaker Place Rehabilitation & Nursing Center. The work is performed under the general direction of the executive director. Supervision is exercised over all food service personnel and other subordinate food service personnel. Does related work as required.

Responsibilities:

• Directs all phases of the food service operation to assure adequate and efficient food service for residents and employees
• Establishes policies and procedures for food service program at the facility;
• Assists in the preparation and maintenance of the food service budget;
• Plans, directs and participates in the in-service training programs including orientation of new personnel and continuing staff development;
• Makes routine inspections of the food service operation for compliance with state, federal and facility regulations;
• Recommends the purchases of new equipment and repair equipment;
• Interviews vendors for the purchase of supplies and equipment;
• Visits with residents to determine the excellence of meals and service as necessary;
• Maintains sanitary hygiene of the food service program;
• Consults with Dietitian regarding special diet menus;
• Coordinates the food service operation with other services in the facility;
• Maintains records and prepares reports.

Full Performance Knowledge, Skills, Abilities and Personal Characteristics:

• Thorough knowledge of modern methods, materials and appliances used in large scale food preparation and service;
• Thorough knowledge of the sanitary aspects of food preparation and service;
• Good knowledge of food values and costs;
• Ability to plan and direct the work of others;
• Ability to plan and direct a large-scale food service operation;
• Good judgment.

Qualifications (either)

PROMOTIONAL: EITHER:

• A. Twenty-four (24) months as a dietetic service supervisor and be licensed as a registered dietitian;
• B. Forty-eight (48) months as an assistant dietetic service supervisor and be licensed as a registered dietitian.

OPEN-COMPETITIVE: EITHER:

• A. Possession of a registered dietitian licensed or certified as a dietitian or nutrition professional by the State of New York. In a State that does not provide for licensure or certification, the individual will be deemed to have met this requirement if he or she is recognized as a “registered dietitian” by the Commission on Dietetic Registration or its successor organization; with five (5) years Long Term Care supervision/managerial experience;
• B. Graduation from an accredited college or university with at least a bachelor’s degree in Food Service Administration, Management, Nutrition or a closely related field and four (4) years of responsible food service experience in a long-term care setting, with at least two (2) years in a supervisory capacity; OR,
• C. Graduation from an accredited college or university with an associate degree in Food Service, Nutrition, or a closely related field and six (6) years of responsible food service experience in a long-term care setting, with at least two (2) years in a supervisory capacity;
• D. Graduation from high school or a GED and ten (10) years of responsible food service experience in a long-term care setting or related field, with at least four (4) years in a supervisory capacity.
