Job summary

Allure of Mount Carroll is seeking a Certified Dietary Manager to lead the Dietary Department in our skilled nursing facility, ensuring nutritious meals, safety, and resident satisfaction. You will work with the Administrator and Dietitian to ensure residents' nutritional needs are met, supervise staff, manage menus, and maintain records while complying with CMS and state regulations.

Qualifications

  • High school diploma or equivalent.
  • Current Food Service Sanitation Manager Certification (FSSMC) or applicable Illinois food safety manager certification.
  • Knowledge of food service operations, sanitation, and food safety.
  • Ability to communicate effectively with residents, families, staff, and healthcare professionals.
  • Strong organizational and time-management skills.

Responsibilities

  • Lead and oversee the daily operations of the Dietary Department.
  • Plan, organize, implement, and evaluate dietary programs and services.
  • Supervise, train, coach, and support dietary staff.
  • Assist with hiring, onboarding, performance evaluations, and staff development.
  • Ensure meals and snacks are prepared and served according to established menus, recipes, diet orders, and resident preferences.
  • Process new diet orders and diet changes promptly.
  • Review therapeutic and regular diets to ensure they are consistent with physician orders.
  • Maintain accurate menus and dietary records.
  • Monitor resident food preferences, likes, dislikes, and special dietary needs.
  • Participate in care plan meetings and assist with nutrition-related care planning.
  • Ensure dietary staff understand and follow resident care plans.
  • Monitor resident satisfaction with meals and respond promptly to concerns.
  • Maintain adequate inventory levels of food, supplies, and equipment.
  • Monitor food costs, purchasing, storage, and waste.
  • Inspect food storage, preparation, serving, and work areas regularly.
  • Ensure proper food handling, sanitation, infection control, and food safety practices.
  • Maintain compliance with applicable CMS, state, local, and facility requirements.
  • Participate in facility surveys and assist with correcting identified concerns.
  • Work collaboratively with the Registered Dietitian and nursing leadership.
  • Assist with quality improvement initiatives related to nutrition and dining services.
  • Maintain a clean, organized, and sanitary Dietary Department.

Allure of Mount Carroll is seeking a motivated and experienced Certified Dietary Manager to lead our Dietary Department and help ensure our residents receive nutritious, high-quality meals in a clean, safe, and welcoming environment.

Position Summary

The Certified Dietary Manager is responsible for the daily operation of the Dietary Department, including food service, menu management, dietary staff, sanitation, inventory, resident satisfaction, and regulatory compliance.

You will work closely with the Administrator, Dietitian, Director of Nursing, MDS team, and interdisciplinary team to ensure residents' nutritional needs, preferences, and physician-ordered diets are consistently met.

Key Responsibilities
  • Lead and oversee the daily operations of the Dietary Department.

What We're Looking For
Required Qualifications
  • High school diploma or equivalent.

  • Current Food Service Sanitation Manager Certification (FSSMC) or applicable Illinois food safety manager certification.

  • Knowledge of food service operations, sanitation, and food safety.

  • Ability to communicate effectively with residents, families, staff, and healthcare professionals.

  • Strong organizational and time-management skills.

Preferred Qualifications
  • Previous dietary or food service management experience.

  • Experience working in a skilled nursing facility, healthcare, hospital, assisted living, or senior living environment.

  • Experience supervising and developing food service staff.

  • Knowledge of therapeutic diets and long-term care regulations.

Physical Requirements
  • Ability to move throughout the facility and Dietary Department throughout the workday.

  • Ability to push, pull, move, and/or lift at least 25 pounds to a minimum height of 5 feet.

  • Ability to push, pull, move, and/or carry 25 pounds for a minimum distance of 50 feet.

  • Ability to assist with emergency evacuation procedures when necessary.

  • Ability to work in a moderately noisy environment.
