Job summary

Fleetwood Post Acute, a 102-bed Skilled Nursing Facility in Easley, SC, seeks a Dietetic Director to oversee the dietary department, plan meals, prepare food, and ensure safe, nutritious service aligned with physician orders and regulatory standards.

You will manage staff, maintain budgets, coordinate with nursing and activities, participate in QA/IDT meetings, and support residents’ dietary needs. The role offers certification assistance and employee recognition programs.

Qualifications

• Certified dietary manager or certified food service manager or similar national certification for food service management and safety
• Associate's or higher degree in food service management or in hospitality with coursework including food service or restaurant management
• 2+ years of experience as director of food and nutrition services in a nursing facility with completed food safety and management coursework

Responsibilities

• Direct and participate in preparation and service of meals that are safe and meet prescribed dietary needs
• Maintain food quality, portion control, and compliance with menus and orders
• Manage department budget, control costs, and order supplies
• Plan and assist with special meals for holidays and events
• Hire, train, supervise, and evaluate dietary staff; disciplinary actions as needed
• Ensure proper storage and handling per regulations
• Process diet orders and update diet cards and resident records
• Assess resident preferences, allergies, and nutritional risks; monthly notes
• Prepare staff schedules and cover contingencies
• Maintain clean, safe kitchen and storage environment
• Coordinate dietary services with nursing and activities
• Participate in QA and IDT meetings
• Present in-service education for staff
• Investigate workplace injuries and retraining
• Ensure compliance with all regulations
• Maintain confidentiality of resident information
• Visit residents for nutritional assessments and diet explanations
• Notify Dietitian of menu changes and document accordingly

National certification in food service management and safety

Associate's or higher degree in food service management or hospitality with relevant course

2+ years experience as director of food and nutrition services in a nursing facility + food safety course

Qualifications

• The director of food and nutrition services must at a minimum meet one of the following qualifications
• A certified dietary manager; or
• A certified food service manager; or
• Has similar national certification for food service management and safety from a national certifying body; or
• Has an associate's or higher degree in food service management or in hospitality, if the course study includes food service or restaurant management, from an accredited institution of higher learning; or
• Has 2 or more years of experience in the position of director of food and nutrition services in a nursing facility setting and has completed a course of study in food safety and management

General Purpose

The Dietary Director oversees all aspects of the dietary department, including meal planning, food preparation, and service delivery. This role ensures that meals are safe, nutritious, and tailored to meet each resident's individual needs in accordance with physician orders, approved menus, and regulatory standards. The director manages staff, maintains budget compliance, and coordinates with other departments to support resident well‑being and satisfaction.

Essential Duties

• Direct and participate in the preparation and service of meals that are safe, appetizing, and meet prescribed dietary needs
• Maintain food quality, portion control, and compliance with approved menus and physician orders
• Manage department budget, control costs, and order food and supplies appropriately
• Plan and assist with special meals for holidays and facility events
• Hire, train, supervise, and evaluate dietary staff; handle disciplinary actions and terminations as needed
• Ensure proper food storage and handling practices in compliance with state and federal regulations
• Process new diet orders and updates; maintain accurate diet cards and resident records
• Assess resident food preferences, allergies, and nutritional risks; complete monthly nutritional notes
• Prepare staff schedules and adjust for coverage needs
• Maintain a clean, safe, and sanitary kitchen and storage environment
• Conduct regular inspections of the dietary department for safety and cleanlinessCoordinate dietary services with nursing and activities departments
• Participate in Quality Assurance (QA) and Interdisciplinary Team (IDT) meetings
• Present in-service education programs for dietary staff
• Investigate workplace injuries and implement corrective actions or retraining
• Ensure ongoing compliance with all federal, state, and local regulations
• Maintain department security and confidentiality of resident information
• Visit residents to conduct nutritional assessments, explain diets, and promote quality food service
• Notify the Dietitian of any menu changes and document accordingly

Supervisory Requirements

Responsible for the overall supervision and management of dietary staff, including scheduling, training, performance evaluation, and compliance with facility policies and regulatory standards.
