Job summary

Grand Hotel Golf Resort & Spa on Alabama's Gulf Coast seeks a Culinary Supervisor to lead the Culinary Department, uphold safety, and ensure high-quality menu items.

You will train kitchen staff, supervise operations, maintain food safety standards, conduct taste panels, manage equipment, and collaborate with the hotel team to deliver exceptional dining experiences.

Responsibilities

  • Staff Training & Supervision: Train and supervise kitchen staff in proper preparation, equipment use and safety measures.
  • Quality Control: Inspect all products before service to ensure quality and correct recipes are used.
  • Timely Service: Maintain accurate timing and pace for service so guests receive food promptly.
  • Operational Oversight: Monitor production flow and adjust to meet cost and quality controls.
  • Food Safety Compliance: Ensure proper receiving, storage, labeling and dating for freshness per Health Department rules.
  • Daily Taste Panels: Conduct daily tastings to ensure dishes are perfectly seasoned.
  • Task Delegation: Assign duties to staff to ensure efficient kitchen operations.
  • Menu Maintenance: Write and update menu specs, recipes, and production forecasts.
  • Equipment Management: Keep kitchen equipment clean and in good repair; report issues.
  • Relationship Building: Foster positive relationships within the team and hotel staff.

As a Culinary Supervisor, you will play a pivotal role in overseeing the daily operations of our Culinary Department, ensuring a clean and organized work environment. Your primary responsibilities will include providing positive leadership through guidance and training to kitchen staff, ensuring proper preparation of menu items, and upholding safety measures. You will maintain high-quality standards and conduct thorough inspections of all food items before service, ensuring only top-notch, correctly prepared dishes reach our valued guests.

Key Responsibilities:

  • Staff Training & Supervision: Train and supervise kitchen staff in the proper preparation of menu items, equipment usage, and safety measures. Evaluate performance and provide guidance to ensure quality products.
  • Quality Control: Taste, smell, and visually inspect all products before service, ensuring only quality and correct items and recipes are utilized.
  • Timely Service: Ensure accurate timing and pace for service, allowing guests to receive food in a timely manner.
  • Operational Oversight: Monitor production flow and make necessary adjustments to adhere to control procedures for cost and quality.
  • Food Safety Compliance: Ensure proper receiving, storage (including temperature-setting), and rotation of food products in compliance with Health Department regulations, including labeling and dating for product freshness.
  • Daily Taste Panels: Conduct daily taste panels to ensure products are perfectly seasoned and suitable for serving.
  • Task Delegation: Assign specific duties to all employees under your supervision to ensure efficient kitchen operations and service.
  • Menu Maintenance: Write, maintain, and update menu specifications, recipes, production forecasts, and ensure adherence to them.
  • Equipment Management: Ensure all kitchen equipment is clean and in proper working condition, notifying supervisors and chefs of any repairs needed.
  • Relationship Building: Foster positive working relationships with all team members throughout your department and the hotel.
