Responsibilities

• Teach inmates proper methods for food preparation, production, and service.
• Maintain safe and sanitary operations including use of tools and equipment, cleaning, maintenance, and storage practices.
• Ensure meals are prepared in a timely manner and according to established recipes.
• Inspect food service areas, equipment, and food to ensure compliance with standards.
• Review census and menu data, adjust recipes, manage supplies, and follow FIFO procedures.
• Plan work assignments, complete performance evaluations, and maintain worker records.
