Under the direct supervision of the Supervising Correctional Cook (SCC), you will ensure items are delivered to Facilities A, B, and C following planned menus, as well as metal accountability sheets in/out done daily, HACCP guidelines. Training and instructions to and the direct supervision of incarcerated persons. Assist other areas in Facility D Kitchen, as needed, ensuring timely completion of assignments meeting deadlines. Facility D is responsible for Baking, Shipping and Receiving Religious Diets, Box Lunches, and Vegetables Prep. Cleaning and sanitation of work areas, including discarding food, should be closely monitored. Ensuring the punctual feeding of meals enables California Correctional Institution (CCI) programs to operate at designated times If incarcerated workers are unavailable, CSCs will be responsible for completing all duties on Facility D for the shift. Assist other areas in Facility D Kitchen, as needed, ensuring timely completion of assignments meeting deadlines.

CCI is a Multi-level, Sensitive Needs Yard, facility consisting of three(3) facilities, encompassed within a campus style layout with varied terrain. Work in this location may require exposure to varied temperatures dependent upon the season.
California Correctional Institution is in the Tehachapi Mountains approximately 325 miles south of Sacramento and approximately 120 miles north of Los Angeles.
-15 minute commute from Tehachapi City, 1 hour 15 minute commute from Lancaster/Palmdale and 1 hour commute from Bakersfield.
-Centrally located for destination/vacation spots: 4 hours to Las Vegas, 2 hours to Los Angeles, 5 to San Diego, 3 hours to the Central Coast and 2.25 hours to Wine Country in Paso Robles.
