Position Summary
The Cook/Sous Chef prepares nutritious, high-quality meals with a hospitality focus for residents' enjoyment in accordance with all laws, regulations, and company standards. Reports to the Dining Services Director.
Qualifications
- Must have a high school diploma or equivalent
- Must have 1 year of scratch food preparation experience
- Must have prior experience preparing meals for large groups
- Must be able to obtain ServSafe certification
Primary Job Responsibilities
- Maintain systems to ensure timely meal services
- Check daily menu and special events calendar to ensure necessary food and supplies are available
- Prepare meals meeting nutritional requirements and appealing in appearance
- Garnish plates to enhance the dining experience
- Prepare food based on standardized recipes, making only authorized substitutions
- Season food appropriately
- Serve food based on established portion controls
- Assist in preparing special meals and for special events
- Estimate portions and utilize leftovers appropriately to reduce food costs
- Operate kitchen within state and county regulations, including sanitation, food storage, recordkeeping, food temperatures, portion sizes, and chemical usage/storage
- Operate kitchen equipment safely and efficiently: steamer, oven, grill, meat slicer, mixer, grinder, dishwasher, etc.
- Maintain cooler and freezer properly: date and label food, ensure no food on the floor, etc.
- Assist with stocking deliveries and daily kitchen duties: washing pots/pans, removing trash, cleaning equipment, etc.
- Complete daily cleaning assignments and maintain a sanitized work environment
- Follow local and state handwashing procedures to ensure food safety
- Assist with supervisory duties in the absence of the Dining Services Director
