The Role:


  1. Cleans, cuts, and grinds meats, poultry, and seafood.
  2. Dips food items in crumbs, flour, and batter to bread them.
  3. Stirs and strains soups and sauces, grills, sautés, and expedites, demonstrating good knife skills.
  4. Weighs and measures ingredients accurately.
  5. Carries pans, kettles, and trays of food to and from workstations, stove, and refrigerator.
  6. Stores foods properly in designated areas.
  7. Assists in training Cook 3 and Steward/Utility staff.
  8. Manages multiple cooking tasks simultaneously.
  9. Cleans work areas, equipment, utensils, segregates waste, and steam cleans or hoses garbage containers.
  10. Distributes supplies, utensils, and portable equipment.
  11. Ensures proper preparation and presentation of all menu items.
  12. Reads menus to estimate food requirements and orders food from suppliers or from storage.
  13. Dates and rotates food containers appropriately.
  14. Practices safety standards at all times.
  15. Coordinates with the Room Chef, Sous Chefs, and Cook 1 for proper preparation, stocking, sanitation, and presentation.
  16. Adjusts oven, broiler, grill, roaster, and steam kettle temperatures as needed.
  17. Measures and mixes ingredients per recipes for soups, salads, gravies, desserts, sauces, and casseroles.
  18. Bakes, roasts, broils, and steams various foods.
  19. Adds seasonings during cooking.
  20. Tests foods by tasting, smelling, or piercing to ensure doneness.
  21. Carves meats, portions food, adds gravies and sauces, and garnishes servings.
  22. Bakes bread, rolls, cakes, and pastries.
  23. Prepares vegetables and fruits by washing, peeling, and shredding.
  24. Butchers chickens, fish, and shellfish correctly.
  25. Works effectively across multiple stations.
  26. Able to stand and walk for prolonged periods (7+ hours).
  27. Knowledgeable of Indiana Gaming regulations, internal controls, policies, and procedures.
  28. Adheres to the Company Service Standards.
  29. Available to work scheduled hours, including holidays and weekends.
  30. Performs additional duties as assigned.
