The Role
- Cleans, cuts, and grinds meats, poultry, and seafood.
- Dips food items in crumbs, flour, and batter to bread them.
- Stirs and strains soups and sauces, grills, sautés, and expedites, demonstrating good knife skills.
- Weighs and measures ingredients accurately.
- Transports pans, kettles, and trays of food to and from workstations, stove, and refrigerator.
- Stores foods properly in designated areas.
- Assists in training Cook 3 and Steward/utility staff.
- Manages multiple cooking tasks simultaneously.
- Maintains cleanliness of work areas, equipment, utensils, and garbage disposal.
- Distributes supplies, utensils, and portable equipment appropriately.
- Ensures proper preparation and presentation of all menu items.
- Reads menus to estimate food requirements and orders supplies accordingly.
- Labels and rotates food containers correctly.
- Adheres to safety standards at all times.
- Collaborates closely with the Room Chef, Sous Chefs, and Cook 1 to meet preparation, stocking, sanitation, and presentation standards.
- Adjusts oven, broiler, grill, roaster, and steam kettle temperatures as needed.
- Measures and mixes ingredients per recipes for various dishes.
- Cook meats, fish, vegetables, and other foods by baking, roasting, broiling, and steaming.
- Adds seasonings during cooking process.
- Tests foods during cooking by tasting, smelling, and checking for doneness.
- Carves meats, portions food, adds sauces, and garnishes servings.
- Bakes bread, rolls, cakes, and pastries.
- Prepares vegetables and fruits for cooking.
- Butchers chickens, fish, and shellfish accurately.
- Works efficiently across multiple stations.
- Must be able to stand and walk for prolonged periods (7+ hours).
- Familiar with Indiana Gaming regulations, internal controls, policies, and procedures.
- Follows Company Service Standards consistently.
- Availability to work scheduled hours, including holidays and weekends.
- Performs other duties as assigned.
