The Role
  1. Cleans, cuts, and grinds meats, poultry, and seafood.
  2. Dips food items in crumbs, flour, and batter to bread them.
  3. Stirs and strains soups and sauces, grills, sautés, and expedites, demonstrating good knife skills.
  4. Weighs and measures ingredients accurately.
  5. Transports pans, kettles, and trays of food to and from workstations, stove, and refrigerator.
  6. Stores foods properly in designated areas.
  7. Assists in training Cook 3 and Steward/utility staff.
  8. Manages multiple cooking tasks simultaneously.
  9. Maintains cleanliness of work areas, equipment, utensils, and garbage disposal.
  10. Distributes supplies, utensils, and portable equipment appropriately.
  11. Ensures proper preparation and presentation of all menu items.
  12. Reads menus to estimate food requirements and orders supplies accordingly.
  13. Labels and rotates food containers correctly.
  14. Adheres to safety standards at all times.
  15. Collaborates closely with the Room Chef, Sous Chefs, and Cook 1 to meet preparation, stocking, sanitation, and presentation standards.
  16. Adjusts oven, broiler, grill, roaster, and steam kettle temperatures as needed.
  17. Measures and mixes ingredients per recipes for various dishes.
  18. Cook meats, fish, vegetables, and other foods by baking, roasting, broiling, and steaming.
  19. Adds seasonings during cooking process.
  20. Tests foods during cooking by tasting, smelling, and checking for doneness.
  21. Carves meats, portions food, adds sauces, and garnishes servings.
  22. Bakes bread, rolls, cakes, and pastries.
  23. Prepares vegetables and fruits for cooking.
  24. Butchers chickens, fish, and shellfish accurately.
  25. Works efficiently across multiple stations.
  26. Must be able to stand and walk for prolonged periods (7+ hours).
  27. Familiar with Indiana Gaming regulations, internal controls, policies, and procedures.
  28. Follows Company Service Standards consistently.
  29. Availability to work scheduled hours, including holidays and weekends.
  30. Performs other duties as assigned.
