Job summary

The Casino @ Dania Beach is hiring for a kitchen role in a fast-paced, high-volume setting. You will prepare grill items, operate broilers, ovens, grills and fryers, and ensure food safety and portion control across all lines.

We value strong communication, physical stamina, and reliable time management. The role requires standing for long periods, lifting up to 50 lbs, and working nights, weekends and holidays in a on-site casino environment with competitive benefits.

Qualifications

• High School Diploma preferred.
• 5+ years of cooking experience in a high-volume kitchen or equivalent education/certification preferred.
• Must be able to obtain the appropriate state occupational license.
• Experience in hospitality preferred.
• Must have strong communication skills.
• Must be able to lift up to 50 lbs.
• Must be able to stand consecutively for 8 hours.
• Must have strong time management and culinary skills.

Responsibilities

What you will be doing

• Prepares grill items or batch quantities to cover all food service lines and schedules.
• Prepares a variety of food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
• Handles food in accordance with sanitary standards.
• Prepares food for customer as specified in customer meal ticket.
• Knows and consistently follows standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
• Attractively presents all items with appropriate garnish and correct portion sizes.
• Participates in daily temperature and taste panels to assure quality.
• Follows standardized recipes, production sheets and portion control standards to prevent food waste and assure high quality products.
• Operates various standard cooking equipment.
• Reports all equipment problems promptly to the Executive Chef, manager and/or supervisor.
• Receives instructions on various and cooking methods from the Executive Chef, managers and/or supervisors.
• Participates in the cleaning of kitchen equipment, refrigerator, storerooms, and dining areas to meet sanitation standards.
• Serves and portions food as assigned.
• Maintains work area in a clean, neat and orderly manner.
• Properly stores all food items after use.
• Remembers to cover, label and date all foods before refrigeration.
• All items will be used in a cost-conscious manner.
• Use the Hazard Analysis Critical Control Point (HACCP) method for food handling.
• Knowledgeable of, observes and complies with The Casino Dania Beach safety policies, emergency procedures and standard precautions.
• Performs all other related job duties as assigned.
• Follow all company and safety and security policies and procedures; report maintenance needs, accidents, injuries, and unsafe work conditions to manager; complete safety training and certifications.
• Ensure uniform and personal appearance are clean and professional; maintain confidentiality of proprietary information; protect company assets.
• Speak with others using clear and professional language. Develop and maintain positive working relationships with others; support team to reach common goals; listen and respond appropriately to the concerns of other employees.
• Ensure adherence to quality expectations and standards.
• Perform other reasonable job duties as requested by supervisors.
• Closes the kitchen properly and follows the closing checklist for kitchen stations.
• Assists others in closing the kitchen.
• All other duties as assigned.
