Summary:
The Cook - Lead is responsible for preparing cooked foods and must be able to perform all station functions, including Fry, Flat Top Griddle, Pantry, and cooking eggs. The role involves providing guidance to junior kitchen staff, communicating ticket times and potential issues to the manager on duty, and ensuring the highest quality service to customers and associates. Performs other responsibilities as directed by the business or management. This is a non-exempt position.
Essential Functions:
- Follow recipes and/or product directions for preparing, seasoning, cooking, tasting, carving, and serving food items, including soups, meats, vegetables, desserts, and other products.
- Taste products, follow menus, estimate food requirements, check production, and keep records to accurately plan and requisition supplies and equipment.
- Provide guidance and leadership for process flows during high-volume times.
- Monitor kitchen activities, offering input and advice to optimize productivity.
- Clean and sanitize workstations and equipment.
- Practice excellent food safety and sanitation practices, complying with HACCP standards.
- Operate various kitchen equipment, measure and mix ingredients, wash, peel, cut, and shred fruits and vegetables.
- Stock, date, rotate, and check the temperature of products.
Minimum Qualifications, Knowledge, Skills, and Work Environment:
- Food preparation skills and knowledge of HACCP standards.
- At least 3 years of related cooking experience in high-volume or fast-casual dining environments.
- Advanced or specialized knowledge in making sauces, soups, sauté, broiler, fry, and pantry items.
- Ability to speak, read, and comprehend instructions, policies, and communicate effectively with customers.
- Ability to lift and move up to 40 pounds.
- Ability to bend, twist, and stand for job functions.
- Frequent immersion of hands in water and chemical solutions.
- Frequent use of sharp knives, utensils, and hot plates.
- Work in hot environments frequently.
- Supervisor/Lead experience is preferred.
