Job summary

Qualifications

• 2 years of relevant experience in food service or equivalent experience
• CRT-Accredited Food Handler - ANSI National Accreditation Board within 90 days
• CRT-Accredited Food Allergy Certificate - ANSI National Accreditation Board within 90 days
• OR CRT-Accredited Food Protection Manager, CFP - ANSI National Accreditation Board within 90 days
• Courses in food preparation
• A course of sixteen weeks to one year in baking education and cake decorating techniques
• Ability to read, write and basic cooking skills. Ability to read, follow and understand standardization recipes. Must be knowledgeable of patient diet requirements. Must be knowledgeable in sanitation practices.

Responsibilities

• Assembles and prepares ingredients for cooking by cleaning and cutting
• Follows standardized recipes and calculates ingredients based on weight and volume
• Monitors food quality, temperature, and presentation
• Records temperatures correctly on temperature log sheets and replaces items not meeting standards
• Stores and labels food items, dates items, and uses leftovers appropriately
• Sets up steam tables for patient and cafeteria tray lines
• Communicates with staff to coordinate service

Essential Functions

• Performs hot food preparation including frying, baking, broiling, braising and grilling. Prepares soups, cereals, eggs, entrees, vegetables, and other food items as necessary. Monitors food quantity needs as customer counts or volumes vary.
• Assembles and prepares ingredients for cooking by cleaning and cutting.
• Follows standardized recipes, calculating ingredients based on weight and volume.
• Monitors food quality, assesses food presentation in regards to taste, texture and eye appeal and maintains food temperatures.
• Records temperatures correctly on temperature log sheets. Takes responsibility to replace food items that do not fit our standards.
• Stores food items as required, labeling and dating items per standards. Appropriately utilizes leftovers within allotted time.
• Sets up steam tables on patient and cafeteria tray lines.
• Communicates with other staff members to ensure continuity and coordination of services.
