1. Prepare all menu items following recipes and yield guides.
2. Direct, train, and monitor the performance of Line Cooks. Maintain organization, cleanliness, and sanitation of work areas and equipment.
3. Prepare and assign production and prep work for Line Cooks; review priorities.
4. Communicate additions or changes to assignments throughout the shift.
5. Set up work station with required mise en place, tools, equipment, and supplies. Breakdown work stations and complete closing duties at the end of the shift.
6. Inform the Sous Chef of supplies needed for the day's tasks.
