What you will have an opportunity to do:

The Cocoplum Pool Bar Manager is responsible for the daily leadership, guest experience, financial performance, and operational execution of Cocoplum Pool Bar. This position oversees all front‑of‑house operations for the poolside dining and beverage experience, ensuring exceptional hospitality, efficient service, and a vibrant resort atmosphere. The Pool Bar Manager leads a team of bartenders, servers, and support staff while partnering closely with culinary leadership, recreation, and pool operations to create a seamless guest experience. The Manager serves as a visible presence throughout the operation, driving service excellence, beverage sales, team development, and guest satisfaction.

Essential Responsibilities
  • Guest Experience & Hospitality Lead the delivery of exceptional poolside dining and beverage experiences. Maintain an active presence throughout the outlet, engaging with guests and ensuring service standards are consistently achieved. Anticipate guest needs and proactively resolve concerns. Create a fun, energetic, and welcoming atmosphere that enhances the resort experience. Build relationships with resort guests and repeat visitors to drive loyalty and satisfaction. Ensure luxury hospitality standards are maintained throughout all guest interactions.
  • Operations Management Oversee all daily Cocoplum Pool Bar operations, including food service, beverage service, seating management, and guest flow. Ensure proper opening, operating, and closing procedures are executed consistently. Maintain outlet cleanliness, organization, and presentation standards. Partner with Recreation and Pool teams to ensure a coordinated guest experience. Monitor pool deck operations to ensure efficient service delivery and guest engagement. Ensure compliance with health, sanitation, safety, and responsible alcohol service standards.
  • Leadership & Team Development Recruit, train, coach, and develop front‑of‑house team members. Conduct daily pre‑shift meetings and service briefings. Provide continuous coaching on hospitality, product knowledge, and service standards. Monitor employee performance and provide feedback and development opportunities. Foster a culture of teamwork, accountability, and guest-focused service. Assist with performance evaluations, disciplinary action, and recognition programs.
  • Beverage & Revenue Management Drive beverage sales through menu knowledge, suggestive selling, and team training. Promote specialty cocktails, frozen beverages, premium spirits, wine, and seasonal offerings. Collaborate with beverage leadership on menu development and promotional programming. Monitor beverage costs and operational expenses. Ensure proper inventory controls, receiving procedures, and product security. Support revenue‑generating activities, special events, and seasonal activations.
  • Financial Management Manage labor productivity while maintaining service standards. Develop staffing schedules based on occupancy levels, weather patterns, and business demand. Monitor daily sales performance and outlet profitability. Assist with budgeting, forecasting, and financial reporting. Control operating expenses while maximizing guest satisfaction and revenue opportunities. Ensure proper cash handling, POS compliance, and financial accountability.
  • Resort Programming & Events Support poolside entertainment, holiday programming, themed events, and resort activities. Coordinate food and beverage support for special events and activations. Collaborate with Recreation leadership to enhance the overall guest experience. Assist with implementing new concepts, menus, and seasonal offerings.
  • Hilton Systems & Technology Utilize Hilton-approved systems, POS platforms, labor management tools, and guest service technologies. Review guest feedback and operational reporting to identify opportunities for improvement. Ensure compliance with company technology standards and operational procedures. Monitor service metrics and guest satisfaction scores.
Education & Experience
  • Minimum 3-5 years of food and beverage management experience.
  • Resort, pool, beach club, luxury hotel, or high‑volume outdoor dining experience preferred.
  • Experience managing beverage-focused operations strongly preferred.
  • Previous leadership experience supervising hourly service teams.
