Bread Alone, Inc. is seeking a Director of Production / Head Baker to lead the Boiceville Bakery's production, ensure quality, food safety, and operational excellence across all production functions.

This role provides technical leadership for the artisan bread program, collaborates with VP Retail & Bakery Ops on strategy, capacity planning, and capital projects, and mentors the production leadership team. Travel between Bread Alone locations for training and cross-functional initiatives, and

Qualifications

• Minimum six years of progressive leadership in artisan baking or high-volume production.
• Extensive experience leading artisan bread production, including fermentation, mixing, shaping, and baking.
• Strong financial acumen with budgeting, labor, inventory, and cost controls.
• Proven ability to recruit, coach, and retain production leaders.
• Excellent communication and cross-functional collaboration skills.

Responsibilities

• Lead the overall production operation and manage the Bread Department.
• Develop and execute production strategies with senior leaders.
• Oversee staffing, scheduling, payroll, inventory, and food cost.
• Maintain quality standards and food safety compliance.
• Drive continuous improvement and document SOPs.
