Job Responsibilities
- Attracts and retains staff, maintains a cooperative relationship with team members, optimizes staff productivity, and serves as a replacement in team members' absence.
- Sets and monitors performance standards for staff, including hand hygiene and equipment cleanliness.
- Trains staff to use new recipes, techniques, and equipment, and oversees food preparation by cooks.
- Manages the culinary team to ensure quality in the final presentation of food.
- Trains and manages culinary and kitchen employees to use best practices in food production techniques.
- Coaches employees by creating a shared understanding of goals and methods to achieve them.
- Rewards and recognizes employees.
- Plans and executes team meetings and daily huddles.
- Maintains staff records, including training, shift checklists, and performance data.
- Performs inventory management, purchase orders, and oversees the delivery of food supplies, including preparing special dishes and supervising overall kitchen operations to ensure promptness, freshness, and quality.
- Responsible for achieving food and labor targets.
- Understands and utilizes performance metrics, data, and trends to focus on margin improvement.
- Obtains feedback on food and service quality and handles customer and patient concerns and complaints.
- Possesses high-volume cooking experience, including bulk and batch cooking.
Qualifications
- Associates degree from a culinary school required.
- Minimum of 5 years of culinary experience required.
- ServSafe certification required within 6 months of employment.
- Excellent verbal and written communication skills required.
- Attention to detail required.
- Ability to mentor and lead staff required.
