Sea Island Company seeks a Chef de Cuisine for a flagship Five-Star outlet on Saint Simons Island, GA. You will lead all day-to-day food operations, control prep areas, and oversee purchasing, receiving, storage, and presentation of menu items while upholding Sea Island’s uncompromising hospitality standards.

As a hands-on leader, you will train and coach staff, design innovative menus aligned with industry trends, and ensure timely service.

Qualifications

  • Experience leading a culinary team in a luxury resort.
  • Proven ability to manage purchasing, receiving, storage, and cost control.
  • Strong knowledge of safety and sanitation regulations.

Responsibilities

  • Execute the culinary vision of a Sea Island Five-Star outlet and lead day-to-day food operations.
  • Control the food prep area and oversee purchasing, receiving, storage, issuance, preparation and presentation of food items.
  • Motivate the team and promote Sea Island's tradition of warm and genuine hospitality.
  • Create innovative cuisine reflecting industry trends and guests' palates.
  • Design and execute delightful culinary experiences with anticipatory service.
  • Lead by example, fill in on the line when needed, and ensure timeliness, efficiency, and product integrity.
  • Participate in staff development, including selecting and training new team members, and provide feedback and coaching.
  • Drive and control financial aspects of Culinary, including revenue, cost control, and labor efficiency.
  • Conduct routine safety and sanitation inspections to meet Sea Island standards and regulatory requirements.
  • Collaborate with resort departments, attend related meetings, and relay details clearly to ensure seamless service.
  • Uphold departmental procedures for safety, quality, timing, attendance, and appearance.
  • Maintain clean, safe, and well-organized work areas and stay informed about Sea Island services and area offerings.
  • Promptly resolve guest concerns by coordinating with appropriate departments and following up to ensure resolution.

Job description

In this important and substantial role, you execute the culinary vision of a specific Sea Island Five-Star outlet, leading all day-to-day food

operations. As Chef de Cuisine, you control the food prep area, and are responsible for purchasing, receiving, storage, issuance, preparation and

presentation of food items. You are an enthusiastic and positive role model, motivating the team by promoting the Sea Island tradition of warm

and genuine hospitality. You create innovative cuisine to reflect industry trends and guests' palates. You foster an atmosphere of anticipatory

service as you design and execute delightful culinary experiences.

You lead by example, acting as a member of the line staff when needed, executing consistently and cohesively in a variety of cooking methods to

assure timeliness, efficiency, and product integrity. You participate in staff development, including the selection and training of new team

members. You provide meaningful feedback and coaching as you thoughtfully supervise Culinary team members. You help to drive and control

financial aspects of Culinary, including maximizing revenue, expenditure control and labor efficiency. You are also called upon to conduct routine

safety and sanitation inspections of the operation to maintain Sea Island’s standards while meeting or exceeding local, state, and federal health

and safety regulations.

You form effective relationships and work closely with all resort departments to maintain rapport and foster open communication. This involves

attending related meetings and ensuring details are clearly relayed to create a seamless service experience. You set the tone by consistently

upholding and ensuring compliance with departmental procedures, including standards for safety, quality, timing, attendance, and appearance.

You take pride in making sure all work areas are sparkling clean, safe and well organized. You maintain a thorough knowledge of current

services, amenities, activities, dining options, shops, local attractions, and historical information regarding Sea Island and the surrounding area.

When needed, you act to promptly resolve guest concerns, coordinating necessary efforts through the appropriate departments and

consistently follow-up to ensure resolution.
