Leprino Foods Company, located in Roswell, NM, is seeking a Cheese Brine Operator to join our dairy production team. The role focuses on brine equipment operation, maintaining cheese temperature, brine balance, pH, and ensuring GMP and USDA compliance.

You will input data, adjust CIP parameters, monitor lines, and work with cross-functional teams to deliver high-quality mozzarella production while adhering to safety rules and company procedures.

Qualifications

• Able to read, write, and speak English.
• Must be a minimum of 18 years old.
• Able to work Sundays through Saturdays, including overtime.
• Able to work a minimum of 8.5 hours per shift.
• Demonstrated ability to complete work with accuracy.
• Basic math skills required.

Responsibilities

• Record cheese temperature, salt, pH, brine, and chlorine and input this into the computer.
• Perform filter changes to maintain safe brine flow.
• Set shift parameters for temperature, brine, salt, and pH.
• Change pipes/elbows to start CIP and ensure correct connections.
• Clean and sanitize equipment; maintain good housekeeping.
• Maintain GMPs and food safety procedures at all times.
• Display safe work behaviors and follow safety rules.
• Communicate with Supervisors and other departments.
• This position has food safety and quality responsibilities.
• Must use computer to adjust specs and data input.
• Know how to enable CIP and mix chemicals for cleaning.
