The Palms at Sebring, part of Diamond Care Group, in Sebring, FL is seeking an experienced Certified Dietary Manager (CDM) to oversee the dietary department for our Skilled Nursing and Assisted Living facilities. This hands-on leadership role requires managing staff, ensuring nutrition standards, and maintaining regulatory compliance.

You will supervise cooks and aides, optimize staffing, manage inventory and budgets, and collaborate with the Registered Dietitian to meet resident dietary needs

Qualifications

• CDM credential required; CFPP certification strongly preferred.
• Experience managing dietary operations in a Skilled Nursing Facility, Assisted Living Facility, or long-term care setting.
• Strong knowledge of healthcare dietary regulations, therapeutic diets, food safety, and sanitation standards.

Responsabilités

• Oversee daily dietary operations for Skilled Nursing and Assisted Living.
• Supervise, train, schedule, and evaluate cooks and dietary aides.
• Develop and maintain staffing schedules to ensure adequate coverage for all meals and shifts.
• Ensure meals are prepared and served according to resident dietary restrictions, physician orders, and nutritional requirements.
• Maintain compliance with AHCA, CMS, Florida regulations, and applicable food safety and sanitation standards.
• Conduct routine kitchen inspections to ensure cleanliness, proper food storage, temperature monitoring, and infection control.
• Manage food ordering, inventory, production records, and departmental budgets while minimizing waste.
• Collaborate with the Registered Dietitian, Nursing Department, and interdisciplinary team to address residents' nutritional needs.
• Ensure therapeutic diets, food allergies, modified textures, and special meal accommodations are accurately followed.
• Monitor food quality, presentation, portion sizes, and timely meal service.
• Provide ongoing staff education, competency evaluations, and corrective action when necessary.
• Maintain survey readiness, including accurate dietary documentation and compliance with regulatory requirements.
• Address resident concerns, dietary preferences, and opportunities for improvement.

We are seeking an experienced, motivated, and highly organized Certified Dietary Manager (CDM) to oversee the daily operations of our Dietary Department, serving both our Skilled Nursing Facility and Assisted Living Facility.

Key Responsibilities:

• Oversee daily dietary operations for both Skilled Nursing and Assisted Living
• Supervise, train, schedule, and evaluate cooks and dietary aides

• Strong knowledge of healthcare dietary regulations, therapeutic diets, food safety, and sanitation standards
• Experience with staff scheduling, inventory management, food purchasing, and budget control
• Excellent leadership, communication, organizational, and problem-solving skills
• Ability to manage a fast-paced kitchen serving a large resident population
• Must be dependable, detail-oriented, and capable of holding staff accountable
