Position Summary
As a General Labor/Packaging – Smokehouse Technician you will produce and package cooked products for shipment, maintaining a safety‑minded attitude that supports our safety culture.
Key Responsibilities
- Implement proper procedures for the Smokehouse department.
- Understand GMP’s, HACCP and SQF guidelines.
- Maintain an accurate oven process rotation to ensure full cross training.
- Perform oven washdown.
- Document HACCP checks via red zone.
- Perform product checks during shift (oven temperature, Powis graphs, pH monitoring, CCP1 lethality stage, and CCP2 temperature check).
- Perform direct observations during cooking cycle.
- Perform pre‑flight oven checks before every smokehouse load.
- Complete Safety/SQF monthly training.
- Follow schedules to ensure all products are cooked and completed on time.
- Analyze situations and provide solutions that benefit the company.
- Maintain accurate smoking records and reports.
- Make decisions on production errors and deviations.
- Maintain a safe work environment, monitoring foot traffic and complying with forklift regulations.
- Perform monthly cooler deep cleans according to SSOP requirements.
Knowledge and Experience
- Professional communication with cross‑functional departments.
- Sense of urgency and attention to accuracy and detail.
- Strong oral and written communication with all organizational levels.
- Ability to manage multiple tasks with rapidly changing priorities.
- Effective teamwork and productivity.
- English literacy – read and write in English.
Working Conditions/Physical Requirements
- Work in temperatures of 40 degrees or less.
- Stand for 10 hours per day.
- Bend, stoop, and squat as needed.
- Work in a fast‑paced environment.
- Lift up to 35 pounds.
- Work 40 or more hours per week.
- Work mandatory overtime if necessary.
- Good hand/eye coordination.
- High attention to detail (e.g., meat type/film/date).
