The Catering Sales Manager is a pivotal role responsible for generating and increasing catering sales within the Mellow Mushroom company owned full service and fast fine restaurants. This position focuses on developing new business opportunities, nurturing client relationships, and ensuring the seamless execution of catering events. This role supports Mellow Mushroom’s standards of quality, customer service, and compliance, including adherence to OSHA safety requirements in food handling and workplace safety operations.
The ideal candidate is a proactive sales professional with a passion for hospitality and a track record of exceeding sales targets.
Key Responsibilities
- Develop and implement strategic sales plans to achieve and exceed catering revenue goals.
- Identify and pursue new catering opportunities through proactive outreach, networking and marketing initiatives to attract new catering clients and build a strong sales pipeline.
- Build and maintain strong relationships with corporate clients, event planners and other potential customers.
- Maintain relationships with existing clients through consistent outreach and service excellence.
- Prepare and deliver customized proposals and contracts based on client needs.
- Coordinate tastings and site visits for potential clients.
- Represent the company at networking events and trade shows.
Event Coordination
- Work with culinary and operations teams to ensure timely and accurate fulfillment of catering orders.
- Manage event timelines, logistics, and staffing in coordination with the store’s General Manager.
- Collaborate with the marketing department to develop promotional materials and campaigns.
- Communicate all event details clearly to relevant departments.
- Oversee event executive to ensure client satisfaction.
Administrative
- Negotiate contracts, pricing and terms to maximize profitability.
- Track and report on sales metrics, forecasts, and event outcomes.
- Prepare and submit accurate and timely sales reports.
- Maintain organized client and sales records using CRM software.
- Develop pricing strategies and assist with menu development.
- Stay updated on industry trends, competitor offerings and market conditions.
Safety & Compliance
- Ensure all catering operations follow OSHA standards for:
- Food handling and storage
- Use of personal protective equipment (PPE)
- Workplace sanitation and cleanliness
- Participate in and uphold company-required safety trainings.

Supervisory Responsibilities
This position does not supervise corporate staff but will supervise catering team members in HGI owned Mellow Mushrooms during training and catering events.
The following work environments are typical for this role:
- Office environment with standard equipment: computers, phones, copiers, etc.
- Occasional on-site catering setup, including indoor and outdoor environments, with variable temperatures and noise levels.
- Commercial kitchen environments with frequent exposure to ovens, freezers, walk in coolers, sanitation chemicals, and food products.
- Occasional contact/immersion of hands in water, sanitation solutions, meat/poultry products, seafood and produce items.
Physical Demands
The physical demands described here represent those that must be met by an employee to successfully perform the essential functions of this job:
- Frequently required to stand for long periods of time, walk, bend, stoop, and lift.
- Must occasionally lift and/or move up to 35 lbs.
- Occasionally required to prepare or serve food items.
- Occasional cleaning of FOH and BOH kitchen and store equipment.
- Vision requirements include close, distance, color, peripheral, and depth perception.
- Must refrain from consuming alcohol prior to and during performing job duties as well as driving or any duties related to travel.
- Capable of driving personal vehicle to store locations or rental vehicles to out of state store locations, and capable of flying commercially for company travel.
Position Type / Expected Hours of Work
- Full-time position.
- Core business hours are Monday–Friday, 8:30 AM–5:00 PM.
- Availability required during evenings, weekends, and for overnight travel, especially during store openings or training sessions
- Occasionally permitted to work from home, highly dependent on work schedule and travel schedule.
Travel Requirements
- Up to 30% travel during a calendar year, including overnight stays (2–3 days at a time).
Required Education and Experience
- Bachelor’s degree in Hospitality Management, Business, or related field preferred.
- Proven experience (3+ years) in catering sales or a related restaurant sales role
- Knowledge of OSHA regulations related to food service and hospitality.
- ServSafe Certification (or willing to obtain).
- Proficiency in Microsoft Office, CRM software and Aloha POS.
- Valid driver’s license and reliable transportation.
- Flexibility to work evenings, weekends and travel as needed.
