Restaurant Associates is seeking an experienced Chef de Cuisine, Chinese Cuisine, to lead the development and execution of an elevated Chinese culinary program in Miami, FL. This role serves as the culinary expert for authentic Chinese offerings, ensuring regional specialties are showcased with refined presentation.

Working from a state-of-the-art production kitchen, you will create restaurant-quality Chinese cuisine distributed to a corporate dining location, maintaining fine-dining standards

Qualifications

• Experience preparing authentic Chinese cuisine in fine-dining settings such as luxury hotels or upscale catering.
• Strong knowledge of Cantonese and Hong Kong-style cooking and regional specialties.
• Ability to lead and mentor a culinary team while maintaining high quality and presentation.

Responsibilities

• Lead all aspects of Chinese menu production with authenticity and exceptional quality.
• Prepare restaurant-quality Chinese cuisine at high volume while maintaining elevated presentation.
• Develop seasonal menus, signature dishes, and innovative Chinese offerings with culinary leadership.
• Preserve traditional techniques while adapting recipes for larger-scale production.
• Oversee wok cooking, braising, roasting, steaming, sauces, and regional specialties.
• Train and support team members in authentic Chinese cooking methods and standards.
• Ensure food safety, sanitation, and compliance with operational standards.
• Assist with inventory, purchasing, production planning, and food cost controls.
